Kidney Bean Stew

Ingredients:

  • 1 can of cooked red kidney beans
  • 1/2 can peeled plum tomatoes
  • 1 small onion 
  • 3 cloves garlic 
  • 1 carrot 
  • 1/2 red sweet pepper 
  • 1 tablespoon all purpose seasoning
  • 1 tablespoon soy sauce 
  • 4 sprigs of thyme 
  • salt to taste 

Instructions:

  1. Begin by slicing the onions and garlic, then fry them until they achieve a golden brown color.
  2. Once they're fried, sprinkle in 1 tablespoon of all-purpose seasoning and stir well.
  3. Following that, add half a can of peeled plum tomatoes (blended or mashed) and sliced sweet peppers to the pan. Maintain a medium/high heat and cook for 5 minutes.
  4. Subsequently, add in a can of cooked red kidney beans, along with sliced carrots, thyme, and a quarter cup of water. Continue cooking for an additional 10 - 15 minutes on medium heat.
  5. During this time frame, season with soy sauce or salt according to your taste preferences.
  6. Serve and enjoy.
