Ackee and Sweet Peppers

Ackee and Sweet Peppers:

Ingredients:

  • Canned Ackee
  • 1/2 Red Pepper, sliced 
  • 1/2 Yellow Pepper, sliced 
  • 1/2 Green Pepper, sliced 
  • ⁠1/2 small onion, chopped 
  • 3 Garlic cloves, chopped 
  • 1 tbsp Soy Sauce 
  • 1tsp Salt 
  • 2 tsp Dried Thyme, or 4 sprigs of Fresh Thyme
  • 2tsp Garlic Granules

Method:

  1. Open the canned ackee and rinse it thoroughly with Cold water. You can use a strainer but not essential to do so, can just rinse it from the can.
  2. Add chopped onion and garlic cloves in a pan and fry this down for about 1 minute on a medium fire. 
  3. Add the ackee to this and 1/2 of each colour sweet pepper and season with thyme, garlic granules, soy sauce and salt. Keep on a medium fire for about 10 minutes. 
  4. Add some hot water to help the ackee cook. Keep on low fire and cover for about 5- 10 minutes.
  5.  Add more seasoning to taste during this time if needed. 
  6. Enjoy.
