Open the canned ackee and rinse it thoroughly with Cold water. You can use a strainer but not essential to do so, can just rinse it from the can.
Add chopped onion and garlic cloves in a pan and fry this down for about 1 minute on a medium fire.
Add the ackee to this and 1/2 of each colour sweet pepper and season with thyme, garlic granules, soy sauce and salt. Keep on a medium fire for about 10 minutes.
Add some hot water to help the ackee cook. Keep on low fire and cover for about 5- 10 minutes.
Add more seasoning to taste during this time if needed.
